This recipe is a great way to use up any leftover pasta. In these DIY days, we could probably call it upcycling ;)
This was always one of Dad's favorite things to make. He loved frittata. Here is an outline of 10 easy steps to creating your own homemade pasta frittata. Click here to view the recipe.
STEP 1- Toss the leftover pasta with some grated cheese.
STEP 2- Crack the eggs in a small bowl and season with salt, black pepper, and fresh herbs. Mix well
STEP 3- Heat the olive oil in an 8" - 10" non-stick skillet.
STEP 4- Add the pasta mixture to the skillet and cook for about 5 minutes.
STEP 5- Allow the pasta/cheese mixture to brown and crisp slightly. Using a rubber spatula, turn the noodles over in the pan.
STEP 7- Add the egg mixture to the pasta in the pan.
STEP 8- Over medium heat, allow the frittata to cook and set for about 8 minutes.
STEP 9- If the top of the frittata is a bit runny, turn it over in the pan to allow the other side to cook. You can also put the frittata under the broiler oven to finish cooking the top.
STEP 10- Turn the finished frittata oven onto a plate. Slice it into wedges and serve warm or cold with a side of salad.
I hope that you enjoy this dish. It always makes me happy.
