Butternut Squash Gnocchi Pasta Salad with Orange Vinaigrette Directions
- Preheat the oven to 450 degrees.
- Line a cookie sheet with parchment paper.
- Toss the diced vegetables with a little olive oil and place onto the cookie sheet in a single layer.
- Roast the vegetable in the oven for about 15 minutes or until tender and slightly browned in color.
- Season the roasted vegetables with a pinch of salt and black pepper.
- Allow the vegetable to cool.
- In the meantime, cook the gnocchi in boiling salted water for approximately 4-6 minutes.
- When the pasta is cooked, drain well and cool immediately under cold running water.
- Drain the cooled gnocchi from the water and place on a clean tea towel. Pat the gnocchi with the tea towel to remove excess water and let them sit for a few minutes to dry.
- Prepare the vinaigrette by placing all of the ingredients in a blender or a mason jar.
- Shake vigorously or blend all of the ingredients.
- Add the cooled roasted vegetable to the gnocchi in a large mixing bowl.
- Dress the salad with the vinaigrette and mix well to incorporate all of the ingredients.
- Plate the salad and top with toasted pecans, if desired.
- Enjoy!
